Finally!!

Almost one year to the day later, and I finally got on the paddleboard!! You may remember my previous post whinging about the friend who got a paddleboard.. Well this morning after I dropped M off at school, I drive by the beach for a quick squiz. Not a wave in sight, completely flat! On a whim, I took a photo and sent it to my friend, saying it was a perfect day for sup if she wasn’t busy. She wrote me back almost immediately and said great idea! I was stoked, then got my gear together and headed down.
By the time we got down there, the wind had picked up, unfortunately, but I did not let that deter me.
I only had a quick go, but I did do it properly, and most importantly, didn’t fall off!! Yayy!!
There were heaps of jellyfish in the water, boats going past, and a wind that got stronger by the minute. But it was still awesome.
So now I want a paddleboard hahaha!!

Rocky Road, Yo!

So it has been non stop raining all week, just in time for school holidays. Awesome. To compensate for the lack of amazingness occurring due to the weather, M has been bundled off to the farm for a few days, where even though it is raining, there is always something exciting happening. Animals need to be fed, babies are being born, fences need fixing, cows need moving, rain hail or shine.
While he has been away I have been incredibly bored, watching non stop cartoons and eating spaghetti on toast.
This morning we woke up and there was a bit of blue sky peeking out from behind the clouds, so we decided to head down to the shops just to get out of the house. And for some reason, we ended up back at home with all the ingredients for rocky road.

Rocky Road
500g melting chocolate
1/2 cup chopped glace cherries, halved
250g milk coffee biscuits, roughly chopped
2/3 cup of baking marshmallows, halved

Melt the chocolate in a heatproof bowl in the microwave. Cook on med for 3 mins, stirring every minute.

Stir through the biscuits, cherries and marshmallows until well combined.

Press mixture into a small slice tray that is either greased or lined with baking paper.

Place in refrigerator for around 2 hours or until set. Slice into small squares.

Yum yum. Just had to test out a piece of course. I wish I had put in some peanuts, maybe even some coconut. Oh well, next time.

Resolution Recipe – Baked Ricotta & Tomato Salsa on toasted batard

Ok peoples, in my previous post I put the call out for some recipe inspiration and the call was answered by The Slacker. Thanks Slacker.

I tried out her recipe night before last, and it was quite successful.

Ingredients:
400g of ricotta
1 handful of shredded tasty cheese
4 tomatoes
2 cloves garlic
1/4 red onion
basil
1 T vinegar
1 tsp sugar
1/4 C olive oil
thyme, salt, pepper to taste
1 batard or some other yummy fresh bread

mix the ricotta, tasty cheese and salt & pepper, press into a baffling dish and bake in the oven at 200C for about an hour or until golden on top. I used a muffin tin.

dice up the tomatoes, garlic and onion. cook the garlic and tomato in the oil, add the thyme. when the tomatoes start to soften, remove from heat, add the red onion, basil, sugar and vinegar. add some salt and pepper if you want. stir it up and smell the yummyness.

slice the fresh bread, rub with a clove of garlic and drizzle some extra olive oil. lightly toast under the grill.

serve the tomato salsa piled high on the toasted bread with the ricotta crumbled over the top. add a side salad of Arugula and avocado, maybe a glass of wine, and you have the perfect light, no fuss meal.

Except its not enough!!! double the recipe, i’m telling you now. but other than that it was delish. the amounts listed above could probably comfortably feed 2 adults for lunch, but not 1 adult and 2 piggy kids for dinner. M requested 2 minute noodles after we finished. it would probably be really nice as a little finger food at a gathering also.

Homemakers Block..

Ok I have been considering how to word this post for some time, and have decided to just lay it down.. I have cooking block! As in, I can’t decide what to cook for my next resolution recipe. But that kind of allows for some fun.

So I’m thinking, you can choose! I want submissions for a new resolution recipe.

The boring stuff:
Recipe must be vegetarian, simple and reasonably healthy.
Must not call for any random specialised ingredients – I’m not buying real vanilla beans, spelt flour or edible gold dust.
Don’t forget the photo of my depleted baking supplies if you are thinking of cakes cookies or slices. I have some stuff, just not loads.
Submissions may be made in the comments section, and I would prefer if you have tried out the recipe already, so I know its worth a try.

Sooo have a think about it peeps.. You have about a week or so. There may even be a prize for the winning entry! No promises haha.

EDIT: I have included a list of what I have in my pantry and refrigerator right now. I don’t mind having to buy 1 or 2 items but as I said, nothing too fancy!

 

Fridge:

Cheese, vege sausages, gerkins, Tom Yum paste, black bean sauce, baked beans, miso paste, balti curry paste, yellow curry paste, organic natural yogurt (berry), butter, sour cream, broccoli, pumpkin, lettuce, felafel balls, capsicum, carrott, cabbage, tomatoes, basil paste, mustard, sweet chilli sauce, milk, tapatio sauce, balsamic dressing, ‘chicken’ snitzel, puff pastry, frozen garlic bread, frozen spinach, frozen peas, frozen corn, 3 bananas

 

Pantry:

Salt & Pepper, olive/vege oil, soy sauce, salsa, onion gravy powder, mexican chilli powder, oregano, golden syrup, ‘chicken’ stock, vegetable stock, balsamic vinegar, tinned diced tomatoes, tinned kidney beans, tinned lentils, baking cocoa, peach slices, mi goreng (bout to eat these for dinner though) potato bake sachets, bread crumbs, weet bix,fettucine, pasta spirals, corn chips, bicarb soda, vanilla essence, almond essence, rose essence, cachous, onion, garlic, raw/brown/white sugar, vegemite, peanut butter, potatoes, bread, tortillas, plain flour, SR flour.

Black Forest Trifle Recipe

The actual finished product

This is best made at least a day in advance, to give the flavours time to strengthen/mould/mix/whatever you wanna call it. The chocolate pudding needs 4 hours to set, so keep this in mind when arranging your timeline.

This will feed anywhere from 10-12 people, maybe even more if you have less piggy servings than I do.

Ingredients:

1 large chocolate roly-poly log (you could use chocolate cake; instead of slicing it, cube it and throw into the base of the dish rather than layering up the sides)

1 680g jar of morello cherries in syrup, pitted

1 480g can of cherries in syrup, pitted

1 package of instant chocolate pudding (I used Cottee’s)

1 Tbspn icing sugar

1 large tub of thickened cream

1 small block of dark chocolate

A handful of fresh cherries, to decorate

Optional: some liqueur to make an adults only version (traditionally in Black Forest cake, Kirsch is used), enough to taste

Method:

Make up chocolate pudding according to packet directions. Put in fridge to set for 4 hours.

Place half the block of chocolate in a heatproof bowl over a saucepan of simmering water. Stir until melted, and dip the fresh cherries in, using their stems. Place on some baking paper and set aside to cool and set.

Slice the roly-poly log into approx 1 cm slices, and line the base and up the sides of your serving dish.

Drain the cherries and reserve approx. ¼ c of syrup. Mix the liqueur with the syrup, if using. Sprinkle the syrup over the roly-poly slices on the base and sides. Place the cherries in the base of the dish.

Top the cherries evenly with the prepared chocolate pudding, and smooth.

Whip the cream with the icing sugar, and smooth over the top of the pudding.

Cover with plastic wrap and place in the fridge overnight. This step is not necessary, but helps the flavors develop.

Lightly grate the chocolate bar over the top of the trifle, and decorate with the chocolate dipped cherries.

Serve and enjoy!

* Note – I used an enormous, deep fruit bowl for this, and it filled the entire bowl.

I was not able to take a picture of the one I made for christmas that showed the insides, but rest assured it is a big hot mess of cherries, cream, cake and pudding. yum.  I kindly made you a picture, though. Cos I’m pretty awesome and talented like that, yeah.

Time to celebrate!! Sorta kinda not really but you know…

It is official, I and my humble little bloggy blogness has had over 1000 views. Wowzers. Thats kind of cray-cray.

When I started to  write this, back in May of this year, I thought it would mostly be family checking it out, with the odd random person coming across it by accident. Well, it appears not. Apparently I talk about the kind of stuff people Google. And then Google in all it’s kindness and generosity says to them ‘Hey, I know a someone who knows a something about the thingy you’re asking me about. Why don’t you go check her out. Cos she knows stuff, and clearly she is the shiznit.’ And so they mosey on over and check out the picture of moving boxes, or my rock hand, and sometimes even my off-the-hook hair braids pics. And it is those people, not you, family, but the mosey-ers, who have pushed me up, up and beyond the 1000 mark. Like, seriously. For real. Not joking. Over a thousand.

And just in case any of you random mosey-ers are reading this here celebration post, and blog themselves, and are right this very second thinking to yourself ‘1000, pffft, I did that in my first week’, well you can just shut it. Because this started out as a place for me to vent and complain about most things in my life that irritate me, from an anonymous platform (which I realised as soon as I sent the link to my family was kinda redundant). And it turns out that my rants and raves and occasional picture and recipe are actually kind of interesting to some people. So there.

I do have a place in society. It’s hunched over a Vaio, late at night, when everyone else is asleep and there is nothing better on TV. Lap it up peeps. Cos I am in demand.

 

To celebrate this auspicious event…

(omg my drunken neighbours just fell over something cos I just heard a way loud crash, damn, why does all the interesting stuff happen late at night when everyone is asleep and I can’t share)

… I am going to post this fairly awesome cookie recipe that I came across on a Real Blog. It’s called Fat Mum Slim and is written by a lady in sydney who I have now stolen recipes such as pancakes from, and added them to my pretty cookbook a certain someone made me for christmas a few years back. I should totes take pics of that cookbook, it would make a nice post.

Anyways… They don’t really have a name so I’ll just call them EveryCookies, and I will explain why as I get to the interesting part in the recipe. The recipe made me about 65 cookies, but I did roll them kinda big.

 

Ingredients:

500g butter

1/2 cup caster sugar

1 can sweetened condensed milk

5 cups self raising flour (yes thats right, 5 cups)

 

Method:

Cream together the butter, sugar and condensed milk. Now, I have quite a large bowl I use for making batters and dough etc. I recommend you also use a pretty huge one. I also used a wooden spoon and elbow grease to cream. If you can, use a mixer. Or get someone else to do it.

Sift the flour in and mix it really well.

Now for the interesting bit. What makes these EveryCookies? I can hear you asking. Well, this is where you throw in whatever you want to the mix. Since it’s so big, I divided it in to 3 and made some choc chip, some snickerdoodles, and some jam drops. Honestly, use your imagination. Try fruit, nuts or lollies. Chantelle at Fat Mum Slim has some great suggestions.

Now roll small teaspoonfuls into balls, and place on a greased or lined tray.

Bake at 180 degrees celsius for 14 mins or til golden.

I have 2 fairly large cookie trays for baking, and I did 2 batches, so 4 trays all up, approx 16 in each tray.

OK so I have a confession to make… clearly I like to bake a little now and then… and yet somehow I still managed to burn possibly about 30 of my EveryCookies (not that it stopped me from eating them, burnt bottoms and all). I blame it squarely on the baby. But I also suggest you keep an eye on the oven temp and time. You know your own oven, and you should be able to tell if it needs adjusting.

Hair today…

I have been thinking about cutting my hair or changing up the hairstyle of late… Not that there is much of a style, as much as a… failure of humanity. I have pretty longish (reaching the bottom half of my back) brown hair. It has this evil wave that is neither proper curly nor proper straight, but somewhere in between. When it wants to play nice it just behaves itself and goes curly (with the help of a lot of product, hair dryer, whip and chair), but it never ever wants to play it straight. Even when I use my super old, super ancient, super…ceded flat iron, it gets this gross, flat, pressed look around the top and towards the ends looks like it is literally waiting for me to lock my front door and then *twang* it’s curly and partying. Of course I could probably solve this particular issue if I had the help of my friend Mr GHD but my budget does not stretch that far (although I will just mention that I know where to buy them for $150, all colors, and my birthday is in October in case anyone was wondering. Just sayin.).

Anyway.

So yeah, I was sort of half toying with the idea of cutting it short but then I’m not really sure I actually want short hair as much as I want a change. And short hair is a commitment for someone who has not had short hair since… I was about 12.

So then I figure I really just need to get out of the ponytail/half-ponytail-half-bun rut. Which is so so true. It’s all I ever do to my hair. Not that the 8 month old or the 8-year-old even notice. What do they care as long as they get fed and watered and played with, right?

So I thought I would present to you all some hair porn. Well. Not really hair porn because if I was going for hair porn then I would probably have all sorts of exciting, far out, serious-work-required-to-maintain hairstyles. Consider this more like… … … Hair home movies. hahahaha.

I would love to work out how to do this - it's called a waterfall braid.

 

This looks like a cute 'going out for dinner or lunch or something' type style, but actually I only like it from one side.

 

I actually like this one too even though it is totally not really me at all. Wish I could figure out how to do it.

 

Maybe I just need a dash of color.. Love this but I'm guessing it won't work as well on dark hair.

 

Ah well. Who am I kidding. Even if I got one of these pretty hairstyles going it only lasts a day, with the exception of the tip dyed hair… And then the next day, you know that mess is gonna be in a pony or a half-pony-half-bun.

 

Oh yeah. And White Wings Creamies? Get away from me. Who the hell invited you in? Get out of my house. You are making serious trouble, encouraging me to eat you. And your friends…

The little man in my head

So here’s the deal. It’s M’s birthday in just over 1 week, and this year I bought him a new bike (how stupid is this – they don’t even sell bikes in 1 piece – I have to assemble the damn thing!! Like, whatever! Do I look like a bike assembly person to you? No? Didn’t think so.), and just a few smaller presents. And since his birthday falls on a school day, I’m going to send a bunch of cupcakes to school with him to share with his classmates.

Since I figured I would like to have our own family cakey moment at home after school, I figured that a simple old box mix would do for the school cupcakes.

And then the little man in my head started up his shite.

Like ‘Just a box mix? OK. Just white frosting? Thats boring. No toppers? Huh. Interesting. Sprinkles? Riiiiiiiiiight.’

So I started trawling through a few foodie blogs I know that concentrate on cupcakes and cakes. Just for a bit more punishment. Y’know. Anyway so there is this one lady whose blog is just total food porn, her cupcakes are like little teeny tiny masterpieces. It actually borders on the insane. Like, who the hell puts that much effort into their food n stuff, why not just eat the damn thing? Just dip it in the bowl of frosting already, shovel in a spoonful of the cream filling after, and mhhhhhhhhhhhhhhhhhh take that!. You know you wanna.

Well. She puts that much effort in. Not that I’m knockin it or anything. like I said. Mini masterpieces.

I digress.

I came across these Cookies n Cream cupcakes, and they look relatively easy. Ish. So I’m thinking I’m going to ignore her recipe for the cupcakes (since I have the trusty old box babies), and use her recipe for the frosting, and some other elements. I’m not bothering with the cream filling. They’re just school kids.

So the idea, in a nutshell, is to use one oreo cookie in the bottom of each patty case, spoon batter over the top, and bake.

Then crush up a whole heap of oreos and fold it into the frosting.

After frosting, I’m gonna top them with a mini oreo.

So the plan is that by posting this into the all seeing eye of the internetz, I will no longer be allowewd to possibly dice the idea. Now that I have said I’m gonna do it, I have to do it.

Coming soon to a screen near you: either a triumphant rub it in ya face hells yeah I did it bitches post about how great my cupcakes were and how all the other kiddies are jealous and want to be M’s best friend now and how all the other mothers either look up to me with pure admiration while deep inside are so so jealous and possibly even hate me.

Or the post that says I failed they sucked I burnt them the shop ran out of oreos my cupcake cases broke the baby wouldn’t stop crying and I got exactly 6 made and are still uniced and I have run out of time i broke my hand trying to build a stupid bike or I plain didn’t do it. So Kill Me.

Ch-ch-ch-ch-change (turn and face the strain)!

In keeping with the theme of the month, I have made some more changes. What do you think of the new look? It feels much lighter, more fun. I love the riot of colors. Reminds me that spring is coming.

Tonight I made a chocolate self saucing pudding. M didn’t quite gobble it down as I expected him to, but then again he didn’t finish his favourite dinner (pasta) either, said he had a tummy ache. I have never quiter found a chocolate pudding recipe that encompasses both the taste I want and the ease I need. I won’t bother making something if the ingredient list gets too long, I just don’t have the time, and usually only have basic baking ingredients in my cupboard. But this recipe was not too bad. It certainly wasn’t a rich, chocolately lava type flavour, but it was not bland either. I actually think it was probably just right. Any richer and it would have been sickening, especially if eaten with ice cream or cream.

So. My Chocolate Self Saucing Pudding.

  • Serves:6 if you wanna be generous, or you could just eat it to yourself over the course of 3 meals…
  • Degree of difficulty:Medium
  • Preparation time:10 minutes (it actually took me more like a half hour but whatever)

Ingredients

Pudding

1 cup self-raising flour
2 tablespoons baking cocoa
Half cup raw caster sugar
80g butter, melted and cooled (can do this in microwave)
half a cup milk
1 large egg, lightly beaten
50g dark chocolate, roughly chopped into small pieces (I used some dark chocolate chips I had in the cupboard; while I was at it I decided to throw in some white chocolate chips too, just for good measure. So I actually used a lot more like 100g of chocolate)

Sauce

3/4 cup raw caster sugar
2 tablespoons baking cocoa, sifted
1 & 1/4 cups boiling water

Method

Preheat oven to 180C conventional / 160C fan forced.
Grease five cup capacity overproof dish.
Sift flour, cocoa into a bowl. Stir in raw caster sugar and dark chocolate.
Whisk the melted and cooled butter, milk and egg together.
Add to flour mixture and mix until combined. Put into ovenproof dish.
For the sauce, combine the raw caster sugar and cocoa together and sift over pudding mixture.
Pour boiling water into large spoon over the pudding to avoid making indentations into the pudding mixture.
Place dish onto a baking tray and bake for approximately 50 minutes or until pudding bounces back when gently pressed in the middle with your finger.
Rest for 10 to 15 minutes and serve with whipped cream and strawberries. Or just eat it straight up.

5 Things I NEED (ok I guess the word I should have used here is WANT) to buy

–          For the house

More plastic containers – all of my ones are missing their mates – lids ran away with the spoon…

3M hooks – the kind that don’t rip the paint off the wall when you pull them off, so I can hang all my bloody paintings already.

Door snakes, cos it is freezing in here right now.

Cutlery (or else I can just get up off my ass and find the cutlery that is still hiding out in some box somewhere)…

Shower hangers – you know, the kind that you hang on the shower head, that you pile up all of your shampoo, conditioner, and soap in.

–          For the kids

Winter clothes because I seem to have given birth to weeds not children, given the rate they grow at.

A plastic climbing gym for the yard so K has something fun to crawl over. When he starts crawling.

Batteries for all the stupid musical toys, Playstation & Xbox controllers etc, that have all gone flat.

Some dishes for baby food. Or maybe I will raid my mom’s stuff when she goes to raid her own stuff for winter clothes.

Some sort of toy organizing system for K’s room… well he has some big plastic tubs for his toys to go inside; maybe what I want is a kid who keeps his toys organized lol.

–          For meeee

Some new shoes – sandals, boots, runners, I’m not picky.

A new winter coat, even though I really love my big grey wooly cardy/shawl type thingy and wear it everywheeeeere.

Some new tee’s, trackies, and jammies. I get so sick of wearing what feels like the same things over and over again. I only have 2-3 winter jam-jams, and I wear them every night. Summer is ok cos I just wear a big tee or a singlet, but in winter I suddenly realize I don’t have enough warm jammies! Or socks!

Some new sunnies! My last pair broke over a month ago and I have been too tied up with bills to get a new pair 😦

Some new books! Have not bought a new book in… years. Or maybe just an e-reader?? 😀
