Resolution Recipe – Baked Ricotta & Tomato Salsa on toasted batard


Ok peoples, in my previous post I put the call out for some recipe inspiration and the call was answered by The Slacker. Thanks Slacker.

I tried out her recipe night before last, and it was quite successful.

400g of ricotta
1 handful of shredded tasty cheese
4 tomatoes
2 cloves garlic
1/4 red onion
1 T vinegar
1 tsp sugar
1/4 C olive oil
thyme, salt, pepper to taste
1 batard or some other yummy fresh bread

mix the ricotta, tasty cheese and salt & pepper, press into a baffling dish and bake in the oven at 200C for about an hour or until golden on top. I used a muffin tin.

dice up the tomatoes, garlic and onion. cook the garlic and tomato in the oil, add the thyme. when the tomatoes start to soften, remove from heat, add the red onion, basil, sugar and vinegar. add some salt and pepper if you want. stir it up and smell the yummyness.

slice the fresh bread, rub with a clove of garlic and drizzle some extra olive oil. lightly toast under the grill.

serve the tomato salsa piled high on the toasted bread with the ricotta crumbled over the top. add a side salad of Arugula and avocado, maybe a glass of wine, and you have the perfect light, no fuss meal.

Except its not enough!!! double the recipe, i’m telling you now. but other than that it was delish. the amounts listed above could probably comfortably feed 2 adults for lunch, but not 1 adult and 2 piggy kids for dinner. M requested 2 minute noodles after we finished. it would probably be really nice as a little finger food at a gathering also.




Homemakers Block..


Ok I have been considering how to word this post for some time, and have decided to just lay it down.. I have cooking block! As in, I can’t decide what to cook for my next resolution recipe. But that kind of allows for some fun.

So I’m thinking, you can choose! I want submissions for a new resolution recipe.

The boring stuff:
Recipe must be vegetarian, simple and reasonably healthy.
Must not call for any random specialised ingredients – I’m not buying real vanilla beans, spelt flour or edible gold dust.
Don’t forget the photo of my depleted baking supplies if you are thinking of cakes cookies or slices. I have some stuff, just not loads.
Submissions may be made in the comments section, and I would prefer if you have tried out the recipe already, so I know its worth a try.

Sooo have a think about it peeps.. You have about a week or so. There may even be a prize for the winning entry! No promises haha.

Ok ok I know it has been a while since my last update, but to be fair, nothing of interest has really happened to report on. K is charging around the house, wreaking havoc in ask the cupboards and drawers in the kitchen. He has laid claim to my wooden spoons. All of them. He babbles away in his own language, and every now and then pops out something that sounds like an actual word. So far we have ‘ta’ ‘shoes’ ‘roro’ ‘keys’ and ‘mum’.
Big bro is a founding member of the local bmx Bandits who terrorise drivers everywhere within the complex. He is on school holidays and has been at his grandads for 4 days, and his dads house tonight. So oof and I have been a little bored. we have been going to the creek as much as possible since it has been getting cooler, and other than that, not a whole lot more. I have not been doing much in the way of resolution recipes, but will have a new one to report on by next week.






Green beans and blueberries


Last week I made a new recipe to add to my resolutions recipe database. I was actually really unhappy with the way it turned out. It didn’t taste especially bad, just not all that great. I don’t think I will be making it again. Green bean casserole is not a common Australian dish, it is mostly found in the US on the Thanksgiving dinner table. Made with mushroom soup and onion rings, it is baked until (as the picture suggests) it becomes casseroleish. Well mine got stuck halfway between soup and casserole. I even made my own onion rings since we do not have Frenchs fried onions in oz. they tasted great. But overall, I was unhappy enough with the finished product to not bother trying it again.
In other news, yesterday I made another batch of Muesli, this time with mixed nuts and dried blueberries. Delish! Keeper for sure. I lowered the oven temp to 120c and it was perfect. M and I are it with yogurt and banana for dessert last night. Sooo good.

Not much more going on. Weather still sucks, going back and forth between rainy and muggy. Today is muggy. Planning a family vacay for the end of the year. Praying for a Lotto win to cover passports haha. Still doing baby rhyme time, K is starting to warm to the other kids there.

Went to my uncles birthday bbq on sunday, caught up with some family I have not seen in a year or more. It was a really nice afternoon, with good good and company. Will see if I can figure out how to load pics from my phone to this post.

Homemade Muesli!


Here it is, as promised – my next installment in ‘New Years Resolution Recipes’: Muesli!

I decided to make muesli because I figured it was something that I could make a largeish batch of and it could last us throughout the week, it is a basic staple, and I was hoping that it would prove to be a money saver for me.

Well it does look like the batch could last us a few days, but I’m not sure about the money saver. After buying all the ingredients (and I actually forgot one), I spent around $16. I could buy 3 boxes of fancy pants granola for that! Oh well. Lesson learned. At least I know exactly what is going into it. Although I will admit that I did not use up all of the ingredients, so perhaps it will work out to be cheaper. Another issue with regards to the ingredients was that I actually had a stupid bug invasion, weevils had taken up residence in my cupboard. Efforts to remove them was just not working – I threw away anything that was open, or looked suspect. I wiped out the entire pantry and cleaned it with eucalyptus oil (hoping the strong smell would deter them). I killed any bug I saw. And then I repeated it. Several times. Finally I gave up the battle, I admitted defeat, and had the exterminator come around. And I threw out three quarters of the food in the house. The final quarter was the food left in the fridge. My point is, if I had not had to throw out all of the food, I probably would have had most of the ingredients in the house and ready to go, as most of them are basic pantry items.

Anyway, I’m rambling, I know. The recipe. I researched a few different recipes, and then decided to kind of wing it.



2 cups rolled oats

1 tsp cinnamon

1 tsp salt

3 Tbspn honey

2 Tbspn golden syrup

3 Tbspn vegetable oil

1/4 cup brown sugar

1 tsp vanilla essence (which I forgot to buy, so I just skipped it)

1/2 cup your choice of dried fruit and or nuts (I used sultanas, apricots, dates, pear, apple, pineapple, almonds, walnuts & sunflower seeds… OK actually I just bought some trail mix)

The ingredients... Notice how everything is Coles brand, cos I'm a frugal bitch


Preheat the oven to 175 c. Unless you’re fan forced in which case I don’t freakin know, for reasons which will become clearer as you read.

In a large bowl, mix the oats, cinnamon and salt together. In a smallish bowl, mix together the honey, golden syrup, oil, brown sugar, and vanilla essence until well combined.

Add the wet ingredients to the dry ingredients and mix together really well.

Spread out on a baking tray lined with parchment paper, and bake for 10 mins. This is the point that I burned and threw out my first batch. Stupid ovens. I keep forgetting how it burns pretty much everything the first time.

Remove from the oven, stir, add the nuts, then put back in the oven. Bake for another 10 mins.


Remove from the oven, stir, then put back in for another 5 mins.

Remove from the oven and allow to cool competely. Break into small clumps or teeny tiny clumps if you don’t like clumps at all, then add the dried fruits.

Keep in an airtight container, should be good to go for a week.

Enjoy with icy cold milk. Yummehhhh.


It was pretty good. M gave his tick of approval too, which was nice of him considering he is strictly a toast with vegemite or weetbix kid. Next time I make it I think I will try apple and cinnamon, or even maple syrup and banana. There are obviously umpteen variations you could do. I also think a berry combo would be really nice. I’m looking forward to eating this muesli with yogurt and banana.

Rhyme Time Trouble


Today has been a busy little day.. Well, not really, but for me it has been. In an earlier post I spoke about my New Years resolutions, about putting myself out there more, and about expanding my cooking abilities. Sort of. Well this week I have really been focusing on getting these things rolling. I have already started on the cooking aspect, and have some new dishes I plan to do some time this week. Nothing fancy, but hopefully they will turn out nicely.

The putting myself out there side of things has had a little kick up the bum so to speak, when I decided to take K to the local library for Baby Rhyme-Time. The Slacker suggested recently that I check out my local library to find out about story time, etc, which I did, and found they had a little half hour class dedicated to singing nursery rhymes. I had booked my car in for some new tires today so I arranged them to coincide so K and I would have something to do while we waited. Lucky the library and the tire place are only about 400 meters away from each other.

When we walked in the door and K saw all the other people there (there were actually heaps of other people, I thought there might be around 8-10 other mums there, but there were more like 15-20!) he freaked out a little, turned into me and held on really tight. He has never been around that many other babies before. We sat down at the back of the room, where there were floor cushions and some chairs set up in a large U, so he had a good view of everything going on. The next half hour we sang some nursery rhymes and did the actions. He did not want me to put him on the ground, but by the end of the half hour he had started to warm up a little and loosened his grip a bit. If we keep going regularly I am sure he will get into it. I didn’t mind it, especially since it is free, but truly, it was kind of lame. I guess I had higher expectations for Baby Rhyme-Time hahaha. I was disappointed though because I was hoping to see some other youngish mums there, but I was most definitely the youngest, most of them looked to be in their 30’s, some even in their 40’s, and one, I’m pretty sure, was the Grandma. If not, well, I feel for her haha.

After that we went and explored the library a little. I had been there once or twice while I was still studying, just to check and see if they had access to any scholar journals on their databases, but they didn’t and for whatever reason I never went back. This time I decided to sign up for a library card. Can you believe I have been here for over 2 years and only just did this now. Crazy. Anyway, I ended up having a nice chat with one of the librarians, which I guess made up for the fact that the Rhyme-Time was full of old mums. Then I borrowed a book for myself from a writer who I used to like reading a few years  ago called Sujata Massey. She writes a series of novels about a Japanese American woman named Rei, who is an antiques dealer in Tokyo, and ends up getting involved in solving crimes, usually associated with whatever antique she is working on. I like her writing because I have always been attracted to asian art, furniture and design. The book I picked up was called ‘Shimura Trouble’, which actually takes place in San Francisco and Hawaii, exploring a mystery around land ownership and Rei’s family, some distant cousin discovered living in the islands. I’m only a few chapters in but I’m enjoying reading about her again.

After our morning travels we got home and I tidied up, wasted some time playing with K, and stealing a chapter or two of the book. Then we headed off to pick up big bro from school, during which K finally decided to pass out and have his nap, which worked out just fine for me since I got to sit in the car while he slept, and read some more.

When we got home, one of M’s friends from a few doors down, Vili, came over and asked him if he wanted to come to a footy club bring a friend day. M was totally excited and keen as mustard to go. I was sweet with him going until I realised it was actually a recruitment day, designed to encourage more kids to join the team, and that I would have to go. After being out all morning I was kinda keen to park on the couch reading until I had to start dinner, but alas, it was not to be. When M’s friend told me how much it would cost to join the club, I was even less keen, but M was a snowball rolling down a hill at that point and for me to stop him from going would have meant catastrophe. Then at the last minute, as I was strapping K into the car, M decided he wanted to go with Vili’s dad in his car. When we got there, Vili ran straight onto the field with his team mates and started training, while M hung back waiting for me. I took one look at his face and knew what was up. ‘Off you go’ I told him.

‘Don’t wanna’ he replied.

‘Why not?’

‘Don’t wanna go anymore.’

He got all shy and shame cos he didn’t know any of the other kids. Their other friend Zavier, who lives in between our house and Vili’s, was supposed to be coming for a ‘taste test’ too but he hadn’t arrived. Vili’s dad ended up taking M on the field and making sure he got introduced to the coach and settled in with the other kids. K and I sat back to watch. Well, I sat back to watch but that quickly turned into chasing after K as he tried to run onto the field, onto the road, across the other field, in the path of the men practising, and eventually stole a ball from a couple of guys who were playing with a 5 year old on a field further away. I think I got more of a work out than M did in the end. Zavier and his mum showed up, watched for a bit, then headed home, without Zavier joining in. They realised that since Zavier only turned 8 this January, he would not be in the same team as the boys, even if he did decide to join. But he was just keen to be doing something with the boys, so he was pretty disappointed. So cute. Vili’s dad said I could go home if I wanted and he would bring M home, but then they started bringing out the big pads and getting the boys to start tackling and barging or whatever they call it, through rows of the dads holding the pads up against them. I stood around and watched for a little longer, then headed home to get dinner started.

When M got home he was so happy, and definitely keen to join. I’m not sure how I will make the $150 joining fee, nor the boots, shin pads, helmet and mouthguard work, but I called his dad to see if maybe he could help out with it. I recently found out how much he makes a week and I figure he can flipping well afford to fork out a whole lot more than he has been! That call didn’t go badly but I didn’t really get an answer either, as he was in a bad mood and on his way to work. Fingers crossed he does pay, and toes crossed that Vili’s dad offers to drive to all the games hahaha!

Anyway, hopefully things will work out. And I hope to surprise you guys with an interesting dish sometime this week.

Family Vacay, Anyone?


So. After the last time I invited y’all over to spend some time at my holiday house, I decided to make a few changes. I really enjoyed everyones company, but I gotta admit, I really got sick of hearing a certain scratchy voice call out ‘Pauliieeeeeeeeeeeee!’ constantly. Wouldn’t have been so bad, except it was punctuated with a sickly sweet ‘Maa-arrrrrrrrrkkkk!’.

Don’t get me wrong, I’m still keeping my leaf house. But next time there is a get together, I will be hosting at my palm house instead.

And their own lounge too, since SOME people don’t like playing the All-In portion of pictionary. They can go to their own lounge and be lame.

And before you start asking, yes, there is a TV in that cupboard there, for anyone who might freak if they don’t watch Spicks & Specks.

You guys are allowed to come to my villa for sunset drinks on the balcony. But then you have to leave.

I will admit, though, sometimes I get a bit over the whole sun/sand/salt thing. Mucks up my hair. Thats when I cruise back to my forest villa. It’s actually where the help stay, but cos I’m pretty grounded and a totally awesome boss n stuffs, I don’t mind slumming it with them every now n then. But they still hafta deliver me cocktails.

See that fresh water in that pool there? Don’t splash, that shit don’t just fall from the sky you know. If you keep splashing you’re gonna hafta bring a bottle of replacement water with you when you arrive.

And since there is only so much I can handle of you guys fawning over me and carrying on about how much ya love me n stuffs (just trying to scam your way into my will, I’m sure of it), I have this restaurant sorted out so we don’t have to share meal times n stuff.

Rain Rain Go Away


It has been raining almost non stop for the past week, and the last 3 days have been especially hard. Towns are cut off, roads and driveways washed away, and thousands of mandatory evacuations. After the devastating floods of last year, the emergency services are erring on the safe side.

It’s a washed out Australia Day for sure, no beach or BBQ for me. Thank god the Triple J Hottest 100 goes on, rain hail or shine. I know loads of people who are flooded in, having ‘Island Parties’, to celebrate Australia Day.

Roasted Cherry Tomato & Garlic Pasta


It is raining cats and dogs here, and has been for the last 2 days. It really has been the strangest summer. I have my doona on my bed and have been sleeping in my warm jammies, as opposed to sleeping under a sheet with the fan cranked on ghetto blast, wearing only a t shirt! Poor M has gone camping at Hastings Point with his grandfather, I hope they don’t get washed out to sea!

During the summer holidays the local council puts on free movies in the evenings in one of the parks along the creek. The park is really cool, and is done in a pirate theme. There is a giant pirate ship that looks shipwrecked, and there are cannons and barrels and a cave with a map to treasure, instead of the usual slide/swings set up. Last week I arranged to take the kids down to watch the movie along with some friends of mine and their kids, and have a picnic dinner. Then M’s friends who live nearby asked if they could come too, and I could hardly say no. So us 4 adults (Jo, Sarah, Jade and myself) and all 6 kids cruised down and watched Happily N’ever After. The kids played in the park while the adults set up the blankets and picnic dinner, then we all munched out and enjoyed the movie. This Friday they are playing Aladdin, and I’m keen to take the boys down again, but this time I think I will try keep it to just the older kids. My friends with younger kiddies had their work cut out for them, trying to get the littlies to sit still and watch the movie, when there was this totally awesome pirate ship just behind us!

A few nights ago M hosted his first ever sleep over. The 2 boys who came to the movie with us, also live within our complex (or ‘The Plex’ to those in the know… Or me, anyway) and play together with M every day, whether it’s X-Box, riding bikes, scooters, kicking balls, going swimming, whatever. The boys had been talking about a sleep over for a while, but since I knew none of them had ever had a sleep over at a friends house before, I thought they were all talk. Apparently not. They came to me and asked if they could have a sleep over before the holidays ended. I said it was fine, but since the holidays are nearly over (school is back on Monday), and M was due to go camping, they should organise it soon.

*Whisper Whisper Whisper* ‘Can we do it tonight please?’ Of course I had to say yes, and there was never any question of them sleeping anywhere else other than the house with the X-Box, haha. I told them to have their dinner, bath or shower, and come over in their jammies, around 8.30. I said they could play X-Box for an hour before bed but that I would be turning it off at 9.30. My plan was that by the time the boys got here, I would have K and M bathed, and K asleep. Ha. Of course K never sticks to his schedule when I need him to, does he. It was 9.20 when I finally tip-toed out of the room, then headed down to check on the boys. You know what? They were all snoring! It was so cute, I couldn’t resist taking a photo. So it was not as bad I thought it would be. Since they were first timers, I was half expecting one or the other of the boys to change his mind throughout the night and want to go home. I figured, if that happened, at least their parents were only a few meters away. I told their dads when they walked the boys down, that I would call if there were any dramas and they could pop down and take them home again. But they were great. So I guess that paves the way for what is in store for the future.

I have a new recipe I would like to share with y’all… Yes, yes, I do understand that constantly posting recipe’s of what I cook for dinner is not quite what this blog is about, however I really had to share this one! I came across this dish on FatMumSlim, she really does crank out some goodies for not being a food blog! She posted it in relation to a post about cooking within a budget – in this case, $5. Well, I think I managed this one for under $5, since I had most of the ingredients already. I only had to buy 1, and it is something that I usually buy anyway when I do my groceries, but I actually used it last week when I made a lasagna to take along to the picnic. I have written down approximate measurements, adjust to suit your personal tastes and how many people you need to feed.


So… Roasted Cherry Tomato & Garlic Pasta!


So freaking good, man!



Olive Oil

Balsamic Vinegar

Garlic, sliced (I used 3 large cloves)

1-2 punnets of Cherry Tomatoes (Sarah left a huge container of cherry tomatoes here when she made a salad to take to the picnic, so I probably used about 2 punnets worth… Sooo could have gone for 3 if I was feeding any more people!)

Ricotta Cheese (I used half a small tub, around 2/3 cup)

Pasta noodles – I used curly

Fresh Basil & Thyme (from my friends garden)



Preheat the oven to 170 c.

Peel and slice the garlic, slice a few of the cherry tomatoes in half. Throw the tomatoes and garlic into a roasting dish, and drizzle with olive oil and balsamic vinegar.

Roast in the oven for around 10-15 minutes, until the cherry tomatoes start to look squishy and collapsed.

While the tomatoes and garlic are roasting, boil the pasta and wash the herbs.

When the pasta is cooked and the tomatoes are roasted, drain the pasta and toss together with the ricotta and herbs.

Serve and smash!


You can see how easy and versatile this dish is, and is whipped up and on the table in around 15-20 minutes.

In fact, it’s so good, I think I might go eat some more right now!

B- What is your favourite holiday? Don’t know if I could pick just one, I have great memories from every one. But one recent trip to spend time with my oldest sister in Vegas definitely stands out.

C- What is your fashion style? I don’t think I have a ‘style’, I mostly wear jeans and tops, or shorts/skirts in summer. I don’t wear much makeup unless I’m going out, and any day I bother to brush my hair is ‘schmick’ day, haha. I wish I could afford to have a style, though! It would be inspired by the inside of Penny’s apartment on Big Bang. It’s so colorful and pretty!

D- Whats your occupation? Right now I’m an at home mumma. Before that I was a destitute student/waitress, before that an international playgirl and before that I worked in admin.

E- What do you hear right now? The ceiling fan making an annoying click, and background music from a movie on TV

F- Who was the last person you hugged? K, who I just put back to sleep. Before that, M, when I put him to sleep.

G- What random song just popped into your head just now? Regina Spektor’s cover of ‘Real Love’ by The Beatles. It’s so beautiful, it’s running on The Biggest Loser ads, which has the potential to kill the song for me 😦

H- What did you do today? Laundry, vacuuming, dishes, cleaned my bedroom, took the boys for a swim, chatted to my mom briefly on skype. Pretty much what I do every day.

I- What was the last text message you received? From one of my best mates, Scotty: ‘I wonder if deaf schizophrenic people still hear voices in their head?’ Hang on he just replied to my reply (‘bahaha wtf where do u come up with this shit!’): ‘Haha a mate sent it to me I laughed so hard, sent it to heaps of people got funny as replies! Yep they still hear voices but they sound funny like deaf people talk, n nah they dont, they just see furious hand signals haha’

K- What is your next big, planned purchase? New front tyres for the Meh-Mobile. Exciting, ya?

L- If you could afford to go anywhere in the world, where would you go? Um, everywhere!! If I had to pick one, it would be to visit my sisters in Hawaii. If it had to be a new somewhere, I think I would go somewhere like the Maldives or Rome or New York, somewhere really luxe and expensive 😀

M- Where do you see yourself in 5 years? Hopefully I will have a degree under my belt, working at a job I love. M will be 13 and K will be 6, so probably still here in Currumbin because M wants to go to PBC High School.

N- Where’s your tattoo/where do you want one? On my left shoulder, it covers my whole shoulder blade.

O- What are you doing this weekend? My friend Jo may possibly be coming to stay, so depending on the weather, probably beaching it with the kiddies.

P- If you could play any instrument, which one would it be? Hmm, never really thought about this, although the other day I momentarily wished I could play guitar.

Q- Whats the one thing you need the most right now? Some money! Ha ha. So I could spend it on tyres, school shoes, uniforms, and a car service. Exciting.

R- Are you a creeper? I have no idea! Like, as in on FB? No, couldn’t be bothered. I’m a blog creeper, I guess.

S- What is your dream job? I would love to be a travel writer or presenter. Doesn’t really gel with my family and lifestyle though, I couldn’t leave the boys constantly. But I would love to be paid to travel.

T- What’s the last good movie you saw? Hmm… Not sure? I saw Happy Feet 2 a few weeks ago, which was not as good as the first. I guess one recent movie I have seen that I enjoyed was watching Bridesmaids with my little sister last year, we laughed our asses off.

U- What’s your favourite quote? Not sure that I have a favourite, but one I read last week has stuck with me: ‘Live in the present and make it so damn beautiful that it will be worth remembering’ and another one that is sort of similar that I do like but not sure if I would say is my favourite: ‘And above all, be a love letter to the universe’.

V- What is your favourite color? I don’t really have a favourite color, but most of my house is sort of done in a red/yellow/deep brownish maroon color. Starting to think it’s time for a change up though, and if I do change up, was thinking maybe tan/blue or tan/green.. Hmm.. What do you think?

W- Give us 3 styling tips that work for you: Haha. Styling. Ok: Shower every day, Wear deoderant, brush ya teeth.

X- What do you love to do when it is drizzling? It would be my idea of heaven to kick back with a good book and some yummy food and maybe a movie after that, but more than likely I’m kid wrangling.

Y- What inspires you? I love GalaDarling, she is very inspiring, so is Sarah Wilson. Steve Pavlina is also great, he always makes me think (He recently posted on FB: If your website attracts anything less than 1000 hits a day, then my brown rice article gains more traffic than your entire page’ haha).
